Shrimp Scampi — protein-boosted

Adapted from Pioneer Woman "16-Minute Meal Shrimp Scampi" — shrimp increased from 2.7oz to ~6oz/serving
  • 1.5 lb large shrimp, peeled/deveined
  • 1/2 onion, diced
  • 6 oz angel hair or linguine (dry)
  • 4 cloves garlic, minced
  • 3 tbsp butter, 1 tbsp olive oil
  • Juice of 2 lemons
  • 1/4 cup white wine (optional)
  • Hot sauce, salt, pepper, parsley, basil
  1. Cook pasta, drain, set aside.
  2. Melt butter + oil in skillet, sauté onion and garlic 2–3 min.
  3. Add shrimp, cook 2 min/side until pink.
  4. Add lemon juice, wine, hot sauce. Simmer 2–3 min.
  5. Toss with pasta, top with parsley and basil.

Mediterranean Orzo Salad — with chicken

Adapted from Pioneer Woman "Mediterranean Orzo Salad" — chicken added, chickpeas doubled to carry lunch duty solo
  • 12 oz orzo, cooked and cooled
  • 2 cups chickpeas (doubled)
  • 1 lb grilled chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1 cup kalamata olives, halved
  • 1 cup feta, crumbled
  • 1/4 cup olive oil, 1 lemon juiced, 1 clove garlic
  1. Whisk olive oil, lemon juice, garlic, salt, pepper.
  2. Combine orzo, chickpeas, chicken, tomatoes, onion, olives, feta.
  3. Pour dressing over, toss, chill.

Salmon Bowl — 3x batch

  • 2.25 lb salmon fillets, cubed
  • 6 tbsp soy sauce, 6 tsp honey, 1 tbsp rice vinegar
  • 1.5 tsp sesame oil, 3 cloves garlic, ginger
  • 3 cups cooked rice
  • 2 bell peppers, sliced; 1.5 cups corn
  • 1.5 cups edamame
  • 2 avocados
  1. Whisk marinade, toss salmon, marinate 10+ min.
  2. Pan-fry or air-fry (390°F, 5–8 min, flip halfway).
  3. Assemble bowls: rice, peppers, corn, edamame, avocado, salmon.
